This cozy brown butter honeynut squash is a quick and easy side dish that steals the show at any gathering. With caramelized edges and a nutty, toasty flavor, it’s comfort food that feels special without being complicated.

Ingredients

Scale
  • 3 to 4 medium honeynut squashes (about 2 pounds total)
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh sage leaves (about 6-8, optional)
  • Flaky sea salt (optional)
  • Maple syrup or honey (optional)
  • Toasted pepitas or pecans (optional)
  • Fresh thyme or rosemary sprigs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Carefully cut each honeynut squash in half lengthwise. Scoop out the seeds and stringy pulp. Place the squash halves cut-side up on the prepared baking sheet.
  3. In a small skillet or saucepan over medium heat, melt the butter. Swirl occasionally until it foams, then brown specks form and it smells nutty (3 to 5 minutes). Remove from heat immediately.
  4. Drizzle olive oil over the cut sides of the squash, then sprinkle with salt and pepper. Spoon or brush the brown butter over each squash half, including the brown bits.
  5. Roast for 20 to 25 minutes, until tender when pierced with a fork and edges are caramelized. If using sage, add it during the last 10 minutes.
  6. Remove from oven. Sprinkle with flaky salt, drizzle with maple syrup if desired, and garnish with crispy sage and pepitas. Serve hot or warm.

Notes

Don’t overcrowd the pan to ensure caramelization. Watch the butter closely to avoid burning. The squash is done when a fork slides in easily but it still holds its shape. Leftovers can be stored in the fridge for up to 4 days and taste even better the next day.
