  • 1 cup (140g) dried currants
  • 1 3/4 cups (420ml) buttermilk

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together 3 cups all-purpose flour, 1 cup whole wheat flour, 3 tablespoons sugar, 1 teaspoon baking soda, and 1 teaspoon salt.
  3. Cut the cold butter into the flour mixture using a pastry cutter or two forks until it resembles coarse crumbs with some pea-sized butter pieces.
  4. Stir in the dried currants until evenly coated.
  5. Make a well in the center and pour in the buttermilk. Stir with a wooden spoon or rubber spatula until a shaggy, sticky dough forms. Do not overmix.
