Ingredients

Scale
  • 2 medium apples (about 300g total), peeled, cored, and sliced into ¼-inch thick pieces (Honeycrisp, Granny Smith, or a mix)
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 tablespoon (15ml) lemon juice
  • Pinch of salt
  • ¼ cup (30g) old-fashioned rolled oats
  • ¼ cup (31g) all-purpose flour
  • ¼ cup (50g) packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons (42g) cold unsalted butter, cut into small cubes
  • 2 tablespoons (28g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Place in a medium bowl.
  3. Make the filling: Add granulated sugar, 1 tablespoon flour, ½ teaspoon cinnamon, lemon juice, and a pinch of salt to the apples. Toss to coat. Let sit for 5 minutes.
  4. Make the crisp topping: In a small bowl, combine rolled oats, ¼ cup flour, brown sugar, ¼ teaspoon cinnamon, and a pinch of salt. Add cold butter cubes. Use a pastry cutter or fingertips to work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in nuts if using.
  5. Assemble the crisps: Divide apple mixture evenly between two 6-ounce ramekins or pour into a small 5-inch cast iron skillet. Sprinkle topping evenly over apples, pressing down gently.
  6. Bake: Place ramekins or skillet on the preheated baking sheet. Bake for 25 to 30 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly, tent loosely with foil for the last 5 minutes.
  7. Cool slightly: Let crisp rest on a wire rack for at least 10 minutes before serving.
  8. Serve warm: Top with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

Use cold butter for a flaky topping. Let the filling rest for 5 minutes to create a syrupy sauce. For a gluten-free version, use gluten-free oats and a 1:1 gluten-free flour blend. For dairy-free, substitute butter with cold coconut oil or plant-based butter. The crisp can be assembled up to 24 hours in advance and refrigerated before baking.
