  • 8 oz (226g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg yolk, room temperature
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly spray the parchment with non-stick cooking spray.
  2. Make the crust: Pulse shortbread cookies in a food processor until fine crumbs form. Transfer to a medium bowl, add melted butter, sugar, and salt, and stir until the mixture looks like wet sand. Press firmly into the bottom of the prepared pan.
