Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until fully combined.
  4. Gradually add the flour mixture to the butter mixture, mixing on low speed until just incorporated. Avoid overmixing.
  5. Wrap the dough in plastic and refrigerate for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
