Transform fresh pumpkin seeds into a crunchy, addictive fall snack with a sweet cinnamon sugar coating. This quick and easy recipe is perfect for Halloween parties, Thanksgiving gatherings, or cozy movie nights.

  • 1 cup fresh pumpkin seeds (or raw pepitas)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons packed brown sugar (light or dark)
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon (preferably Saigon cinnamon)
  • ¼ teaspoon fine sea salt
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. If using fresh seeds, rinse them in a colander under cold water, removing any pumpkin strings or pulp. Spread on a clean kitchen towel and pat very dry.
  3. In a medium microwave-safe bowl, melt 2 tablespoons of unsalted butter. Let it cool slightly.
  4. To the melted butter, add 2 tablespoons packed brown sugar, 1 tablespoon granulated sugar, 1 teaspoon ground cinnamon, ¼ teaspoon salt, and ½ teaspoon vanilla extract (if using). Stir until combined.
  5. Add the dried pumpkin seeds to the bowl and stir until every seed is coated.
  6. Pour the coated seeds onto the prepared baking sheet and spread into a single layer.
  7. Bake for 20-25 minutes, stirring halfway through at the 10-minute mark.
  8. The seeds are done when golden brown and fragrant. They will still feel slightly soft but will crisp up as they cool.
  9. Let the seeds cool on the baking sheet for at least 10-15 minutes.
  10. Once cooled, break apart any clusters and enjoy.

Notes

For best results, dry seeds thoroughly before baking to ensure crispiness. Low and slow roasting at 300°F prevents burning. Seeds will continue to crisp as they cool. Store in an airtight container at room temperature for up to 2 weeks. For a vegan option, use melted coconut oil or vegan butter.
