  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (about 190g) all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup M&Ms (regular milk chocolate or Halloween-themed)
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup Halloween sprinkles (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch round or square cake pan with parchment paper or lightly grease it with non-stick spray.
  2. In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar. Beat on medium speed for 2-3 minutes until light, fluffy, and pale in color. Scrape down the sides of the bowl halfway through.
  3. Add the egg and vanilla extract. Beat on low speed until just combined. The mixture may look slightly curdled; that’s normal.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed and adding about a third of the flour mixture at a time. Mix until just combined—a few streaks of flour may remain.
  6. Fold in the M&Ms and chocolate chips using a rubber spatula until evenly distributed. The batter will be thick and slightly sticky.
  7. Transfer the batter to the prepared pan and spread it evenly with the spatula. Press it into the corners; a rustic top is fine.
  8. Sprinkle the Halloween sprinkles on top and press them in gently so they stick.
  9. Bake for 22-25 minutes. The cake is done when the edges are golden brown and set, but the center still looks slightly soft and puffed. A toothpick inserted into the center should come out with a few moist crumbs, not raw batter.
